Pro 800 Overview
The new Profitec Pro 800 lever machine comes with handcrafted American walnut lever valves for steam, hot water, and the portafilter handle. Its elegant design is complemented by a pine-green pressure gauge that fits seamlessly into the classic aesthetic, while the PID control is discreetly hidden behind the water collection tray. The machine is designed to offer the best espresso experience with pre-infusion via its massive brew group and unique pressure system.
Design & Build
The Profitec Pro 800 is a beautifully crafted machine featuring a massive 3.5-liter copper boiler, with temperature controlled by a hidden PID display. The machine can be either plumbed directly or used with a 3-liter water reservoir. When plumbed, the machine operates silently as the pump is never engaged; otherwise, a vibration pump operates to refill the boiler.
Pre-Infusion & Pressure Control
A key feature of the Pro 800 is its ability to perform true low-pressure pre-infusion. When the lever is pulled down, boiler pressure (1-1.5 bar) is applied to the brew water, saturating the coffee grounds gently. This low-pressure pre-infusion helps produce smoother, sweeter shots.
The machine's copper boiler provides additional flexibility, as copper’s ability to withstand pressure makes it more suitable for the direct boiler-to-group connection than stainless steel.
Brewing Performance
The Pro 800’s lever action allows for a unique pressure profile during extraction. As the lever is released, the pressure rises to 12 bars, then gradually decreases. This tapered pressure curve ensures optimal extraction and helps avoid over-extraction, resulting in a sweeter, balanced shot. Users can also recock the lever mid-extraction to introduce more water and adjust the pressure profile as needed.
Steam Power & Components
The Pro 800 delivers excellent steam power with its no-burn wands and four-hole steam tip, driven by its 3.5-liter boiler. The machine’s internals are thoughtfully designed with high-quality components: a Gicar PID controller, well-insulated boiler, and easily accessible layout. All internal plumbing is copper and stainless steel, ensuring durability.
Attention to Detail
Profitec’s hallmark quality is evident in the machine’s solid frame, stainless slide rails on the drip tray, and height-adjustable feet.
